Summer Spring Rolls

Time: 30 minutes

I may be jumping the gun a bit by preparing a recipe categorized as “summer”, but hey, here in New York, the sun is shining, the temperatures are rising, and the smell of summer is in the air.  However, in my opinion, a recipe as such could very well be prepared any given day of the year!  It’s perfect for an evening with guests, being served as an appetizer or even a main course.  This recipe is versatile not only for which course it will be served as but also versatile when speaking about the ingredients which are used to create it!

There are tons of options when making spring rolls. I will list a few below, but be creative!! You know what you like. Get inspired. This recipe only takes 30 minutes to prepare, but to further save time, you can use leftover chicken or buy the chicken already cooked, like rotisserie style for example, from your local grocery store.


2 cups torn, cooked chicken (you can use leftover chicken or buy some rotisserie chicken)

1 cup grated carrot

1/4 cup rice vinegar, plus 1-2 tablespoons

1 tbsp sugar, divided

12 rice papers

1/3 of English cucumber, cut julienne

4 scallions, finely chopped

1/2 cup fresh mint leaves (or basil or cilantro)

About 12 lettuce leaves (I used red leaf lettuce, but you could really use any lettuce)

1/2 cup cooked brown or white rice

1/2 cup chunky peanut butter

2 tbsp soy sauce

3 tbsp water


  • shrimp
  • beef
  • pork
  • salmon
  • tuna
  • cabbage
  • asparagus
  • avocado
  • turnips
  • lime
  • coconut
  • broccoli
  • sesame seeds
  • noodles (any)


Step One: Whisk together cooked chicken, carrots, 1/4 cup rice vinegar and 2 tsp sugar until sugar dissolves, then set aside
Step Two: Set up your work area with rice papers, lettuce, chicken & carrot mix, cucumbers, scallions, mint, rice and a large bowl of warm water to soak rice papers.
Step Three: Soak 1 rice paper for 15 seconds in water, remove, place on work space, lightly dab with clean cloth to soak excess water. Lay one lettuce leaf on rice paper.
Step Four: Add chicken & carrot mix.
Step Five: Add cucumber.
Step Six: Add scallions.
Step Seven: Add mint leaves.
Step Eight: Add rice.
Step Nine: Take bottom part of rice paper, fold over and roll.
Step Ten: Cover or place in sealable container until ready to serve.

Peanut Sauce:

Step Eleven: Take peanut butter, soy sauce, remaining sugar, remaining rice vinegar and water and blend until smooth.
